I decorated a few cupcakes in an effort to say “Welcome to the World, Zoe.” Zoe is the baby I alluded to in last night’s Diaper Cakes. At the time of this post, I am not yet aware she’s fully here, but I am aware that she and Mom are working on it.
To decorate the cupcake above, I used a round dot tip number 3 and let the icing come out however it wanted. To decorate the rest of the cupcakes below, I used star tips 21, 18, 16, and 14. The icing is an “American” buttercream made from butter, confectioners’ sugar, almond extract, and a little bit of gel food dye.
A word about buttercream. The process to make a “real” buttercream includes butter, egg, and a hot sugar syrup. The general consensus is real buttercreams taste the best, but American buttercreams hold up better for decorating purposes. Other than that tidbit, I am sort on words tonight.
