Continuing the week where the weekend left off, how about root beer cookies to add a sweet note to Monday?

Root beer gets its flavor from the root of the sassafras tree or the sarsaparilla vine.  Say those two words three times fast.  Sassarilla?  Sarsafras?

These cookies can be flavored with root beer extract or root beer syrup, the latter of which I used.  Root beer syrup can be store bought or made, again, the latter of which I used.

Taking a nod from instructions at Baking Bites, I made the syrup by reducing 12 ounces of root beer to just over 4 ounces.  If you prefer to use root beer extract for flavor, add one or two teaspoons depending on your tastes and 1/3 cup milk to make up for the liquid lost by not using the syrup.

The cookies taste very little like root beer, though they are pleasantly sweet.  The root beer flavor really comes through in the icing, and I would suggest icing them as they are plain-jane without a little topping.

Root Beer Cookies

Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ cup (1 stick) butter
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 1 egg
  • ⅓ cup root beer syrup
  • 1 teaspoon pure vanilla extract
  • Icing
  • ½ cup (1 stick) butter
  • 3 cups confectioners’ sugar
  • ¼ cup root beer syrup
Instructions
  1. Whisk together the flour and baking soda in a medium sized bowl and set aside.
  2. Cream the butter and the sugars together.
  3. Beat in the egg, root beer syrup, and vanilla.
  4. Slowly add the flour mixture and mix until well incorporated.
  5. Place by rounded tablespoons onto a lightly greased cookie sheet.
  6. Bake at 375 degrees for approximately 10 minutes or until the cookies are just brown.
  7. Allow to cool before icing.
  8. To make the icing, beat ½ cup butter and the confectioners’ sugar until combined.
  9. Add the root beer syrup and beat at high speed until the icing is light and fluffy.
Notes
To make root beer syrup, simmer 12 ounces of root beer over medium heat and reduce to ⅓ cup.
