As a little girl, I once looked up at a sliver of a moon and pointed out the moon was broke.
As a big girl, I like to drink Blue Moon. Some may argue my taste buds are broke.
Today, we’ll see the first blue moon in nearly three years. Let’s kick off the long weekend with cupcakes and beer. Cheers!
Blue Moon Cupcakes
Yield 12 cupcakes
Ingredients
For the Cupcakes
1 1/3 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup granulated sugar
1/2 cup butter, softened
1 teaspoon vanilla extract
1/2 teaspoon orange extract
1 orange, zested
1 cup Blue Moon beer
1/4 cup milk
For the Frosting
1 cup granulated sugar
1/3 cup water
1/4 teaspoon cream of tartar
2 egg whites, at room temperature
1 teaspoon vanilla extract
1 teaspoon orange extract
Instructions
- Whisk together the flour with the baking powder, baking soda, and salt and set aside.
- In a large mixing bowl, cream the sugar and butter until light and fluffy.
- Add the vanilla extract, the orange extract, and the orange zest to the butter-sugar mixture and beat until combined butter and sugar.
- Add the dry flour mixture, the beer, and the milk to the mixing bowl in three alternating additions, starting and ending with the flour.
- Line a muffin tin with paper liners and fill the wells about 3/4 full with batter.
- Bake at 350 F for 20-22 minutes. A toothpick inserted into the center of a cupcake will come out clean when done, and the tops of the cupcakes will spring back lightly when touched.
- To make the frosting, combine the sugar, water, and cream of tartar in a saucepan over medium heat.
- Heat until the sugar is dissolved and the mixture bubbles.
- While the sugar mixture heats up, beat the egg whites, vanilla extract, and orange extract until soft peaks form.
- Very slowly (so you don't cook your egg whites) add the hot sugar mixture to the mixing bowl. Continue to beat until stiff peaks form, and then frost your cooled cupcakes.
Notes
The frosting recipe yields beyond plenty for 12 cupcakes. I made the full recipe but you may want to consider halving the amounts listed if you do not want leftovers.

After consuming my third cupcake, I decided the frosting reminded me of marshmallow fluff. It truly is delicious.
I came here looking for mint chocolate chip cupcakes for my boyfriend because
his birthday is coming up and he reminded me for his love of Mint Chocolate Chip
anything. And then I came across these and his favorite beer is Blue Moon! This is perfect!
Does it actually taste like Blue Moon? Or is it very faint. I’m not even sure how
this could be possible!
The Blue Moon cupcakes taste like a light, moist white cake with just a hint of something else to them. I thought the orange extract was the most prominent flavor, so if you do not like orange, perhaps just stick with the vanilla extract. Whatever you decide to make, I am sure the cupcakes will taste delicious!
Just FYI – made these today and they were fabulous, but thereis a slight typo in the frosting recipe. In the ingredient list it calls for orange extract, but in the directions it says orange juice. I found a very similar recipe elsewhere that also called for orange juice, and used 1 tablespoon for the frosting, and no orange extract. Just wanted to let you know and hopefully avoide confusion for the next person who makes these delightful cupcakes!
